I seem to get in these ruts where I neglect my blog and myself. Over the last few weeks I haven't felt motivated for well, anything. I've started to get back on track but I really haven't gotten into a steady routine yet.
Over the weekend I went on a cooking spree.
I find it hard to cook for one person and am normally not motivated to make myself lunch in the morning and then wind up ordering in. Which one isn't healthy, and two is terrible for my wallet. I found a very nice recipe for breakfast that was easy to make in bulk, fills me up and is Paleo. Score!
I joined Mark's Daily Apple and received a few free e-books, one of them being a reader made Cookbook. It has a lot of great recipes in there that I'm very excited to try!
This weekend I made the Omelet Muffins. Basically make an omelet, put it in a muffin cup and bake. Very easy to make a bunch of them and take them to go every morning, which I've been doing. I also made homemade beef stew which has lasted me all week and is delicious. Did I mention it is getting cold in Minnesota?
All in all I went through 16 oz of bacon, 12 oz of Sausage and 25 eggs for the Omelet Muffins which made about 42 little muffins. I've been having 2 for breakfast each day.
I cooked up 1.19 pounds of stew meat, beef broth, tomato paste, lots of carrots and seasoning for the beef stew.
I've got 5.67 pounds of chicken cooked up as well as 5.32 pounds of pork tenderloin. This has been great for salads (I LOVE salads, easy, quick, no fuss). The pork has been enjoyed with home made sweet potato fries, not completely Paleo but absolutely delicious.
I forgot to weigh myself today, I know I'm back to about 260 but I'm focusing on the little changes in my diet, not eating out and being more active. So not a complete disappointment!
